Shaved Asparagus Spring Salad

I love salads especially during spring and summer as they are light, fresh and simple! Unfortunately the same old salad can get boring real quick! This shaved asparagus salad is fresh and simple and the perfect spring side dish to accompany any protein for lunch or dinner. This salad would even go great served with a fritatta on the weekend!

GATHER

1 bunch of asparagus

3 tbsp olive oil

juice of 1 lemon + zest

2 tbsp fresh herbs (basil, thyme, fennel, mint)

1/2 cup sunflower seed kernels

1/2 tsp sea salt or to taste

1/4 tsp black pepper

MAKE

Begin by toasting your sunflower seeds, without oil, in large skillet over medium heat for about 2 minutes. Once toasted, remove the seeds from heat and set aside. Next trim the end off of your asparagus and begin to shave the asparagus with a vegetable or potato peeler. Use a knife to cut smaller that are not able to be “shaved” with your peeler. Set your shaved asparagus into a medium bowl and toss with lemon juice, lemon zest, fresh herbs and olive oil. Season with salt and pepper to taste and top with your toasted sunflower seed kernels.
