Spring Pea and Avocado Dip

Although frozen peas do make a wonderful make shift ice pack; thanks to this recipe, they also make a wonderful dip too! This recipe is basically like a spring edition guacamole and who does’t love guacamole? Since this recipe calls for so little ingredients you can whip it up with very little planning or plan to bring this to your next party or BBQ!

GATHER

2 ripe avocado (medium to large)

1 cup frozen peas, thawed to room temperature

juice of 1 lime

1/4 cup olive oil

1 garlic clove

1/4 cup chopped fresh herbs such as; cilantro, basil, fennel, mint

salt and pepper to taste

MAKE

Place your peas and garlic into a food processor or blender and begin to blend. Slowly pour in your olive oil and continue to process until peas are blended and make a paste. Next add in your avocados, lime and fresh herbs and pulse until blended. I like to keep the avocados in larger chunks but you might prefer to blend it into a puree. Add salt and pepper to taste. I like to save 1 tbsp of fresh herbs to sprinkle on top and drizzle with additional olive oil. Serve with your favorite veggies or gluten free crackers or use as a spread on top of gluten free bread!
