Farmer's Market Mule
It is only June first, but the temps in Houston have already hit 96 degrees F! This Farmer's Market Mule cocktail (or mocktail) was created in honor of the start of summer and in hopes of a slight respite from the the already brutal heat. The average cocktail contains close to 30 grams of carbohydrates which is essentially the amount of carbohydrates in 2 slices of bread. Additionally, most cocktails contain chemical preservative such as; sulfites, food dyes and high fructose corn syrup which are all known toxins to the body. This simple and refreshing recipe is only slightly sweet from the fresh carrot juice, but is highly refreshing. Not to mention this cocktail is extremely dense in liver and kidney supporting nutrients that are especially needed when enjoying any alcoholic beverage! If you desire a sweeter cocktail, try subbing the lemon juice for 1/4 cup fresh orange juice!
GATHER
4 oz cold pressed fresh carrot juice (from your local juice shop or juiced at home)
juice of 1 small lemon ( or about 2 tbsp fresh juice)
1 tsp grated ginger
1.5-2 oz your favorite potato Vodka
mint for garnish
MAKE
Pour vodka, lemon juice, carrot juice and grated ginger into shaker with ice. Shake well and pour over ice. Garnish with lemon slice and or fresh mint and enjoy! Option to skip the vodka and add extra carrot juice instead to create a delicious mocktail.
NOTE: I was able to find fresh and PLAIN carrot juice at my local Central Market Grocery Store. Using an already prepared carrot juice that is mixed with other fruit works well too and would just create a sweeter cocktail! You also might consider visiting your local juice shop and asking for plain carrot juice to take to go! I love Juiceland and Nourish juice shops which are both here in the Houston area.
