Zesty Grilled Shrimp
In this recipe I used frozen wild caught shrimp I purchased from Trader Joe's but fresh shrimp would work well too. Bamboo skewers were used in order to put the shrimp directly on the grill. If you prefer not to use a grill, instead you can sauteed the shrimp in a greased skillet over medium heat.
GATHER
1lb wild caught shrimp ( I purchased mine frozen from Trader Joe's)
3 tbsp chopped basil
3 tbsp chopped thyme
1/4 tsp red pepper flakes ( or more depending on how spicy you prefer)
1/2 tsp garlic salt seasoning ( I love Trader Joe's Garlic Salt)
2 tbsp avocado oil
1 tbsp grass-fed butter, melted
MAKE
First begin by soaking wooden skewers in cold water for 30 minutes to reduce burning of the sticks during grilling. Preheat your grill to 400 F or medium/high. If using frozen shrimp; first begin by defrosting under cool water until thawed. Once the shrimp is thawed place into large mixing bowl and drizzle with 2 tbsp avocado oil, melted butter, herbs, red pepper flakes and garlic salt and mix until fully incorporated with raw shrimp. Use the remaining 1 tbsp of avocado oil to grease the grill racks. Skewer about 4-6 shrimp (depending on size of shrimp) on each skewer without leaving spaces. Place prepped shrimp skewers onto baking sheet and brush one side of the skewered shrimp with marinade remaining in the large mixing bowl and refrigerate for 2 minutes or until the butter firms up. Flip shrimp over, brush second side and refrigerate 2 min or until the butter firms up. Place the prepped shrimp skewers on the barbie and grill shrimp with the lid on about 2 minutes per side or just until cooked through and no longer transparent. Remove shrimp from grill. Don't overcook or they will be tough and chewy. Serve with grain free tabbouleh or cilantro lime cauliflower rice and enjoy :)
