Strawberry Fig Collagen Smoothie
You guys! This smoothie is a late summer DREAM COME TRUE! If you are reading this from Houston, Texas you understand how serious the summer heat is and especially towards the end of summer ( does summer really ever end?). Cooling off with an ice cold, creamy smoothie is absolutely necessary and using fresh figs and strawberries is a definite late summer bonus!
I am also majorly excited to share that this smoothie is the first of many more to be created using my new Ninja Blender. I asked some of you all on social media what blender you had since mine had recently broken and many of you mentioned the Ninja! I just got it in the mail and I am clearly already obsessed and totally inspired! So far it not only works just as well as the top dollar blenders, but comes in a much more attractive price point! It also has the option to blend single serve smoothies and to be completely honest I almost never make smoothies for 2 as I am the only one usually wants a smoothie in my household! GATHER
4-5 medium figs ( or 2-3 large) , skin peeled and frozen in freezer overnight
1 cup frozen strawberries
1/4 cup full fat canned coconut milk
2 scoops Vital Proteins Marine Collagen Peptides
1 tbsp cashew butter
1 tsp vanilla extract
1/2 cup water or other liquid to thin to desired consistency
1/2 cup ice or more as desired
1 tsp maple syrup (optional for additional sweetness)
MAKE
Blend all ingredients together in blender. Add in more water or ice to achieve desired consistency. Enjoy!
