Pumpkin Spice Pumpkin Seeds

Inspired by the flavors and smells of fall, this balanced snack will satisfy any and every pumpkin spice enthusiasts! Enjoy these pumpkin spice pumpkin seeds as a snack alone or sprinkle them on top a pumpkin (or any) smoothie. My personal favorite way to enjoy these is on top of dairy free coconut yogurt or on top of a grass fed greek yogurt for a balanced dessert! 

 

 

GATHER

2 cups raw pumpkin seeds or pepitas

1/2 cup unsweetened coconut shreds

1 tbsp ghee or grass fed butter

1 tbsp coconut oil

3 tbsp pure maple syrup

1 tsp vanilla extract 

2 tsp pumpkin pie seasoning

1 tsp cinnamon

 1 pinch sea salt

MAKE

Preheat your oven to 250F. In a medium mixing bowl melt your grass fed butter ( or ghee) and coconut oil in the microwave. Once melted add the maple syrup, vanilla, salt and spices and mix well. Next add your pumpkin seeds or pepitas to the mixing bowl and ensure the seeds are equally coated with the mixture. Spread the seeds onto a line or greased baking sheet and place in the oven on the center rack. Bake at 250F for about 45 minutes.
