Paleo Orange Sesame Chicken
This recipe goes great with the Butternut Squash Sesame Noodles recipe or would be wonderful to serve with your favorite rice or quinoa dish or even an Asian inspired salad. I chose to make this recipe on the stove but it could also be made into skewers and grilled! A recipe like this I like to make the marinade the day before I plan to grill or cook and let it marinade over night. Not only does this save me some time the day of because I literally just dump and grill it; but it also make the chicken much more tender and flavorfull!
MAKE
2 large chicken breast, cut into 1 inch chunks
1/4 cup sesame seed oil +1 tbsp for cooking
juice of 1 orange
1 tbsp honey
1 tbsp coconut aminos
1 pinch sea salt
2 tbsp sesame seeds
First begin by making your chicken marinade. Ideally you would want to marinade for at least 1 hour or potentially over night. Whisk together your sesame seed oil, orange juice, honey, 1 tbsp sesame seeds and sea salt into a glass dish. Taste the marinade for salt or sweet and adjust according to your preference. Cut your chicken breasts into 1/2-1 inch chunks and place them into the marinade. Allow to marinade for several hours or overnight.
Begin cooking by heating about 1 tsp of sesame seed oil in a medium pan over medium to high heat. Place 3-4 chicken pieces in the pan and allow to cook for about 3-4 minutes on each side. Be sure not to over crowd your pan. You will likely cook your chicken in 2-4 batches. Top with sesame seeds and serve with Butternut Squash sesame noodles or your favorite rice or Asian salad.
