Matcha Blueberry Energy Balls

This simple snack or dessert recipe is filled with nutritious ingredients to provide steady and lasting energy! Matcha green tea is a natural source of energy boosting caffeine but it also is rich in antioxidants such as; EGCG, which has been shown to have anti-viral, cancer fighting and even weight loss benefits! Different than a cup of coffee; matcha green tea contains L-theanine, which when combined with caffeine gives lasting energy without any jitters, and can even promote memory and concentration! The coconut butter used in this recipe provides satiating fat and MCTs that provide lasting energy that will keep blood sugar stable for hours! Dried blueberries are used in this recipe for a more immediate boost of energy and they also provide powerful anthocyanins which are compounds that can protect the immune and nervous system in the body. The addition of collagen peptides to this recipe make it the ultimate blood sugar balancing snack and these treats can even be used post workout for added muscle recovery.

GATHER
1 cup cashews
1/3 cup coconut flour
1/4 cup coconut butter, softened
1/3 cup +2 tbsp tahini
2-3 tbsp raw local honey or to taste
2 scoops Vital Proteins Collagen Peptides
1/3 cup dried blueberries or other dried fruit 
1 tbsp matcha green tea powder
½ cup coconut shreds
1 tsp vanilla extract
1 pinch sea salt 

MAKE
In a food processor; place your cashews, coconut flour, matcha, collagen and sea salt and do a quick pulse to incorporate. Next add in your coconut butter, tahini, honey, vanilla and pulse until combined. At this point the mixture will begin to clump up and you can also chose to taste the mixture at this point and see if the flavor is to your liking or if you would prefer more honey! Next, remove the mixture from the processor and place into medium sized mixing bowl. Sprinkle in your dried blueberries and mix them in with a fork or spoon. Using your hands portion out enough of the mixture to squeeze and mold and roll into a 1 inch ball. Lastly, use a shallow dish to roll each ball into the coconut shreds or simply sprinkle on top for desired look! Store in the refrigerator or out of heat and enjoy within 3 days!
