Maple Cinnamon Roasted Delicata Squash

 

If you have not had delicata squash before please run to your nearest Whole Foods, Trader Joes or Sprouts and find some now! I have to admit that I have never even had Delicata Squash before I spotted it in the grocery store this past week as it is not as readily available in the major grocery stores as spaghetti or acorn squash is. Rarely does something turn out PERFECT with a first attempt but this squash recipe absolutely did although I suspect that my recipe/technique in preparing this buttery and sweet squash is not the reason. Instead I am giving delicata squash all the credit as it is just THAT good no matter how it is prepared!

GATHER

2 delicata squash

1 tbsp grape seed oil

2 tbsp maple syrup 

1 tsp cinnamon

1/2 tsp (or to taste) sea salt

MAKE

Preheat oven to 350F. Wash your delicata squash and cut in half length wise and cut off ends. Remove seeds from the center of the squash and discard or save the seeds to roast in the oven for a snack. Cut squash into 1 inch pieces and place into medium mixing bowl. Place squash onto lined baking sheet and toss with grape seed oil. Sprinkle with sea salt and bake on center rack for about 20 minutes. Option to broil directly under broiler for an additional 1-2 minutes. Once cooked through toss the squash with the maple syrup and cinnamon and additional salt if desired and enjoy!
