Sage Butter Cauliflower Gnocchi with Pancetta

If you have not tried the Trader Joe’s Cauliflower before then this is the perfect recipe for you! It’s crunchy on the outside and soft and pillow like texture on the inside.plus its full of nutrient dense cauliflower. I feel a tad bit silly that I am classifying this as a recipe because it is really more of a “heating” and “assembly” type situation, but that does’t make this meal or side dish any less delicious. Plus simple is GOOD sometimes! This recipe has all the nostalgic flavors of the Holidays with the added benefits of detox supporting cauliflower hidden in the gnocchi. I hope you enjoy it as much as my family does!

GATHER
2 bags of Trader Joe’s Cauliflower Gnocchi (Green Giant also makes a similar product)

1 package of uncured or nitrite free pancetta or prosciutto , loosely chopped or torn into 1 inch pieces

2 garlic cloves, minced

1/4 cup or several sage leaves

1 tbsp of butter

1 tsp avocado oil

salt to taste

MAKE

First begin by allowing your gnocchi to thaw either in the fridge over night or if you are like me and have zero planning skills, you can spread them out on top of a paper towel on a plate and microwave until warmed or just thawed. Be ware they will be a sticky mess at this point so be sure to spread them apart evenly. Once thawed set them aside while you heat about 1/2 tbsp of butter + 1 tsp avocado oil in a medium pan over medium high heat. Add 2 minced garlic cloves and several sage leaves to the pan. Allow the garlic to brown and the sage to become fragrant.

Next add in about a half cup of torn or chopped pancetta and begin to brown it. Lastly, add the remaining 1/2 tbsp of butter and your thawed @traderjoes cauliflower gnocchi to your pan. Be sure to spread the gnocchi apart so they do not stick. As they begin to brown they will form a crust on the outside so they become less sticky and easier to stir and flip. Brown gnocchi until desired crispy deliciousness and of course taste for salt. Try to resist eating the entire batch... or do not resist and have a nice happy belly!
