Keto Chicken Tenders

This incredibly easy ketogenic chicken tender recipe has 5 ingredients and even better has 1.5 grams (or less) of carbohydrates per serving! In this recipe I used Epic Brand Pork Rinds in place of flour -or bread crumbs. I know what you are thinking... and while pork rinds do not immediately come to mind when thinking of "healthy and nutritious" foods; they are a great substitute for wheat flour and definitely serve their purpose while on a ketogenic diet. Plus no one expects chicken tenders to be a kale salad anyways...

If you are going to eat/use pork products you might as well chose a quality source and brand. This particular brand of pork rinds uses only organic, non-GMO, pastured, and antibiotic free pork. Plus a huge bonus is that the sea salt and pepper flavor is already seasoned with sea salt, black pepper, garlic and onion powder meaning you don't have to worry about adding seasoning to the "breading" for your practically carb free chicken tenders.

GATHER

1 lb chicken tenders or 1 lb chicken breasts cut into tenders

1 bag of Epic Sea Salt Pepper Rinds

1 tsp smoked paprika

2 tbsp almond meal or almond flour 

1 egg 

MAKE

Preheat oven to 350 F. Line baking sheet with parchment paper and set aside. In food processor place entire bag of pork rinds and pulse until you achieve a bread crumb-like consistency. You will likely have extra "crumbs" left  but it is always better to have extra than to have not enough right? Pour crumbled pork rinds into shallow dish and mix with 1 tsp paprika and 2 tbsp almond meal.

In separate bowl, whisk 1 egg before placing one tender into mixture at a time. Next roll the egg soaked tender into the pork rind crumbs until completly covered and place onto baking sheet. Continue until all tenders are completely covered with pork rinds crumbs. Place baking sheet with tenders onto the middle rack in the over and bake for 20 minutes. Serve with desired condiments and enjoy!
