Cauliflower Breakfast Hash
Cauliflower is like the ketogenic rock star. It has the ability to take on many different forms and flavors to create a wide variety of dishes without compromising your low carbohydrate diet. In this dish I used cauliflower florets, multicolored bell peppers and green onion to mimic the flavors and textures of a typical breakfast hash without the carbohydrates from potatoes. I used whole cauliflower and chopped it into small florets but a short cut option could be to use cauliflower rice which is pretty readily available at most grocery stores. You can top the hash with a few fried eggs or mix in some breakfast sausage or both!
GATHER
1 small head of cauliflower, cut into small florets ( nearly riced)
2 bell peppers ( red, orange, yellow, purple or a combo!), diced
2 green onions, chopped ( save the green ends to top the finished product!)
1 tsp grass-fed butter
1 tsp avocado oil
Salt and pepper to taste
Trader Joe's Everything but the Bagel Seasoning to garnish (optional)
MAKE
Heat butter and oil in a large skillet over medium heat. Add in the chopped green onion and cauliflower as it will take longer to cook. Once the cauliflower becomes tender ( about 8 minutes) add the diced bell peppers and cook for about 2 minutes longer. Top with a cripsy fried egg (or two) and breakfast sausage and enjoy!
